I love making a casserole ahead of time that I can enjoy each morning for breakfast and this Paleo-friendly (gluten & grain-free) sweet potato and sausage breakfast casserole recipe is my new favorite!
I make mine with sweet potatoes, since I’m obsessed with them (I could eat them for every meal…seriously!), but it’s fabulous with turnips as well. If you aren’t a big fan of turnips, but still want to add them to your diet (which I highly recommend), then mix up a blend of the two.
Now, I know what you’re thinking. Turnips for breakfast? But, seriously. Give it a try.

The ground meat and eggs give you great protein (I suggest using grass-fed meat & pasture raised eggs and buy locally if you can), the turnips or sweet potatoes provide fiber and complex carbohydrates and the coconut oil or butter (grass-fed, organic) provides healthy fats. If you want even more healthy fats, add a side of avocado and you’re good to go!
As if you needed one more reason to try it out, this casserole is perfect for busy people (maybe that’s you?) as you can double the recipe and place half the mixture in another baking dish, cover and freeze to cook the following week. And did I mention it’s also great for lunch or dinner? Done!
Here’s how I do it:
- Coconut oil or butter for greasing
- 3 turnips or 2 large sweet potatoes, peeled *use 1 of each if you’re doing a blend
- 1/2 lb. of ground bison, beef, pork or turkey sausage
- 3 scallions, green parts only, chopped
- 4-6 eggs, beaten
1. Preheat the oven to 375 degrees Fahrenheit and grease a small glass or ceramic dish.
2. Peel & grate the turnips and/or sweet potatoes (I use a food processor).
3. Brown the meat with a little oil in a large hot frying pan until not quite cooked through, breaking it up into small pieces with a spoon or spatula.
4. Toss in the rest of the ingredients and stir, then spoon into the baking dish.
5. Bake for 45 minutes.
6. Let it stand for a few minutes so the casserole sets before you cut into it. Serve warm.
Health Coach Tip: The amounts above are just a guideline for you. Sometimes I add more ground meat and more eggs. Other times I use a lot of sweet potato and use less meat, but play up the scallions by adding more. Mix it up and have fun with it!
